Fuoco Apizza Promises Something Different For Cheshire


When Cheshire native George Constanti was asked if he was worried about the surrounding competition to his new pizza business, he just shrugged and shook his head.

“I’m not worried at all,” he said. “When people see what we’re doing over here, and realize it’s not the same pizza they’ve been having, they’re going to know that we’re different.”

Constanti is in the process of opening up Fuoco Apizza in the old Lora’s Deli building on West Main St.

“It’s been a long process, but I am excited to finally be here,” Constanti stated.

His restaurant, which aims to focus on take out and deliver of coal-fired pizza, is set to open up in February 2020. Constanti grew up in Cheshire, and his entire family has been involved in the pizza business since he was a child. 

“Ever since I was born I was involved in pizza,” he recalls. “I even tried to get away from it for a while, but here I am again. I just couldn’t stay away.”

According to Constanti, coal-fired pizza is in a league of its own when it comes to producing top-quality pizza, and the equipment to make something like that needs to come directly from a place familiar with good pies.

“We’re having a huge oven delivered directly from Italy to Cheshire any day now,” he said. “It’s going to be a really big, nice oven, and it’s going to make all the difference.”

Coal-fired pizza, Constanti explained, is what is produced at famous restaurants like Pepe’s Pizza or Sally’s Apizza in New Haven, and is what he believes will separate his new place from the competition. 

“Anyone who says ‘oh no, another pizza place’ has no idea what they’re in for,” Constanti mentioned. “We’re not just another pizza place, we’re so much more than that.” 

For the Constanti family, this will be the third restaurant they have opened — a tradition that Constanti is proud to continue.

“My mother has her place in Prospect, and she is finally retiring at the end of the year,” he explained. “And my brother owns Christos in Wallingford, that’s where I’ve been for a while. But now it’s time for me to do my own thing.”

In addition to offering coal-fire pizza to his customers, Constanti will also be providing another service — one he believes will be welcomed by the entire community. Fuoco Apizza will deliver.

“The fact that we’re going to be delivery focused, and located in such an accessible part of town is great,” expressed Constanti.

As of now, the only other pizza restaurants offering delivery in town besides Domino’s are Mr. Bimonte’s and Cheshire Pizza & Ale, which has only been offering delivery services as of recently.

“I am really itching to get started,” Constanti said, with a smile. “I can’t wait to be doing what I love in my hometown.”
